Vegan Cauliflower Pizza Crust

(Vegan, gluten-free, nut-free, oil free)

Ingredients:

  • 1 Cauliflower head

  • Garbanzo bean flour

  • Rice flour (brown rice recommended)

  • 1/2 cup mashed sweet-potato or yam

  • Ground flax seeds

  • Corn meal

  • Nutritional yeast

  • Parchment paper

Instructions

  1. Boil the cauliflower head.

  2. After cauliflower is cooked, drain and allow to cool. drain instructions.

  3. Create a “flax egg”…

  4. “Rice” cauliflower and flax egg in food processor or blender.

  5. In a large bowl, combine the riced cauliflower, flax egg, nutritional yeast, garbanzo bean flour and rice flour. Add optional sweet potato. Stir and fold to create a thick “dough”.

  6. As you knead slowly add more garbanzo bean flour and rice flour.

  7. Roll dough into balls.

  8. For best results - let dough sit overnight covered in the refrigerator. (Optional)

  9. Lay parchment paper on pan. Sprinkle cornmeal on the parchment.

  10. Set your dough ball on the parchment covered pan and press into a flat round shape. 1/4” thick.

  11. Pinch the edges slightly to create a crust.

  12. Wet your hands with water to smooth the crust.

  13. Prebake the crusts at 400 degrees for about 20-25 minutes or until the edges start to brown lightly.

  14. Remove crusts from oven (keep them on the pan).

  15. Turn oven heat up to 450.

  16. Add your sauce and toppings of choice.

  17. Bake pizzas with toppings for 10-15 minutes longer at 450 degrees. (Longer time is needed for larger thicker crusts)

  18. Slice and serve right away.The pizza cools off pretty quickly, so keep it in a warm oven until ready to serve.
